At the base is an almond shortcake enriched with sour cream for a dense, rich bite. The fruit layer features a vibrant cassis compote paired with a light vanilla Diplomat cream — a silky blend of pastry cream and airy Chantilly with white chocolate. On top, a softly whipped cassis ganache adds freshness and completes the dessert.
The decoration is crafted with Valrhona Inspiration Raspberry chocolate, offering natural berry notes and an intense fruity finish — a beautiful touch of festive colour.
