Chestnut: Smooth chestnut cream on top of vanilla and white chocolate ganache, a lightly tangy note of forest fruit compote, and a moist orange cake for freshness, all presented on a crisp chestnut flour sablé cookie. Cassis: Almond shortcake enriched with sour cream for a dense, rich bite. The fruit layer features a vibrant cassis compote paired with a light vanilla Diplomat cream — a silky blend of pastry cream and airy Chantilly with white chocolate.
